first of all....study at a foreign university, even nust is not good enough. studying here is a proper waste of doing o/a levels
second, options are, dual major in ee and me, mechanical only, automotive engineering.
as far as jobs are concerned, it depends on YOU, these days, you should be very confident, good with softwares like autocad, solidworks, have a good history of participation in extra curriculars.
if you are all about GPA then you will get just an average job.
e,g a guy with a gpa below 3 got a job in PMI because of his personality
i am not so familiar with UK , but UK has many small automotive companies. so i think there should be jobs. if nothing else there is always a chance for entrepreneurship (IMO best thing that can happen, if it works)
i advise to aim very high, like ivy league. the system makes you feel that you are average, but there is no such thing, no barrier exists that you can not overcome if you believe in yourself.
