Body work was done by a denter painter of your choice, the interior and leaf springs were done by another person.
You provide the supervision and quality control. you were able to find workers who did work to your satisfaction.
As you will be specializing in Restorations, vehicles can be left in your possession for longer periods of time, I would just get some good business insurance to cover loss just in case and leave the actual work to the tradesmen.
Just take one vehicle and estimate a 3-5 month period for it and go from there.

FYI, i do some freelancing auto work on the side for pocket money and financing my tool collection. i either work at customer house or rent a bay hourly.
