Get a clean 6th Gen Civic, parts are easy to find, maintenance is easy, its robust and feels comfortable.
AC is also excellent if maintained properly.
Kei cars (kodo cars ) are also good and parts are easily available as well, prices vary from shop to shop though.
A 5th, 6th or 7th Gen Civic really suites your needs though, its your choice in the end.
We were in the same situation a few years ago, we got a 5th Gen Civic for our use, we still have it and it still runs strong. The AC is also very, very good. Its done almost 300,000KMs or more but it still has that "oomph" when you push the accelerator hard and it still looks good. We have also kept a 6th Gen Civic along with a 7th Gen Civic, both were really good and comfortable. In our experience, we've found that Hondas are more reliable than Toyotas (I maybe wrong but this is my opinion). A 1996 Corolla is also very good and suites your needs very well. Getting a well maintained car is not always linked to its mileage nor model. All of the cars I've mentioned have great fuel economy but fuel economy depends on one's driving style, completely.
