You’re using zic 10W40, keep using it and change it after 3500km. Use original air and oil filters. If want to switch then go for Shell Helix HX7 5W30 blue box.

Babar Ali is right, You should have cleaned its radiator rather then bypassing the thermostat.you are using wrong OIL 0W20 is recommended total quartz/shell/caltex/honda which ever is available but viscosity should be 0W20.Change interval is 8000 KM if you drive in plains and you do not drive your car like a sports car. (which you can't as its 660cc car). if driving conditions change, check your engine OIL after 5000 KM.Use only genuine air and oil filter.Last clean your cooling system and pour in ONLY TOYOTA LONG LIFE COOLANT

How did you know it overheat? Maybe cooling system has leak. Put thermostat back in and repair leak and pour fresh coolant. Running cold damages engine and reduces its life.

Was it red sign? And when it was overheating did you check radiator that it has water/coolant in it?

fill your radiator circuit with water, drive your car for like 10-20KM, check water level if its significatnly less than you poured in than there is a possibility of leakage in radiator circuit, or may be (less chance) your engine seal is damaged
