Preparing a Steak Dinner
1. Preheat grill to about 600F:

2. Choose good cuts of meat (Porterhouse is one of my favorites) which should be at room temperature:

3. The cuts should be about 1 inch in thickness:

4. Sprinkle lightly with a mix of salt, black pepper, red pepper and garlic:

5. Place the steaks on the grill and lightly season the other side:

6. Cook one side at high heat for about 4 minutes:

7. When the color begins to lighten flip over:

8. Cook the other side at high heat for another 4 minutes or so:

9. Flip over for second time:

10. Reduce heat to about 300F:

11. Rotate the steaks 90 degrees to get the hatching pattern if wanted:

12. Let sit for 15 minutes before serving with all the trimmings:
