Hi guys, please go through my post and help me understand what went wrong:
So yesterday i had a failed attempt at making peri peri chicken at home. I really like it and recipe seemed quite easy so i went ahead and bought chicken drumsticks from hyperstar, unfortunately they didn't have quarters or skinned pieces. I made deep cuts and marinated the chicken overnight. The next day, there was a lot of water in container and i could already sense that marinate is now very diluted. Didn't know what to do as recipe had no information about this so i went ahead and wrapped em up in aluminum foil, made few holes on top and put it in a pan. I don't have an oven so my wife uses a deep pan with salt to make cakes, i did same and put a steamer stand in pan and on it put the foil wrapped drumsticks. I let it bake/steam for 30mins. When i came back, the chicken had left a lot of water (and steam) so steam when touched the lid turned in to water and went inside the salt causing it to burn and smoke.
Then i shifted the pieces to my newly bought cast iron grill pan and seared them. Later i thickened the marinade and put it over the drumsticks. End result is that the marinade itself and the chicken that came in contact in marinade was tasty, the rest had an odd kind of smell (may be not cooked enough)
My plan was this:
Marinade overnight. Result>> chicken left a lot of water and even though i left overnight, inner parts of chicken was bland.
Bake/steam. Result >> i have seen people baking fish in salt+pan but in my case water ruined it.
Sear in grill pan. Result >> Crust had good taste.
drizzle the peri peri marinade. Sauce was also tasty.
