For raw just go the settings and use the RAW format for recording pictures. Use lightroom to process the RAW images. I would suggest avoid RAW for now. Use the JPEG format.
Panning shot is difficult to explain but easy to demonstrate. You can google it up and you will find some excellent reviews and instructions. Otherwise I can post a step by step guide as well
Exposure should be kept at 0.00 so let it be at the normal.
Aperture can only be controlled in the Manual (M) and Aperture priority mode (A). You just have to turn the dial for the aperture to change. The bigger the aperture the better the picture (in terms of blur background, to make the subject focus and sharper in the pictures composition)
Note: Bigger apperture means smallest f-xx number. f3.6 for u is a BIG aperture on the 18-55 kit lens however an aperture of f11 or f22 is a SMALL aperture. Keep the aperture nearest to the f3ish figure for portraits and for landscapes keep it at f9. Don't go beyond f11.
Keep the white balance on AUTO for now. Thats advanced.
I would suggest using YouTube for photography tutorials. There are some great people out there teaching it
If you are confused about what to do, only then use AUTO mode (with flash OFF), otherwise use the A mode to progress further once u have gotten a hang of the functionality.
P.S. NEVER use the built-in flash in the DSLR or i'll personally come and strangle u. Increase ISO to compensate for darkness but NEVER use the built-in flash.
Cheers
