There isn't any way to disable the knock sensors on this ecu. Hondata and unichip aren't stand alone systems rather they work alongside the car's ecu.
The tuners are fiddling with the AFR and ignition timings until they feel they have come up with a safe "map" backed up by numerous WOT runs. Once the sensors start showing 0 knocking events they are happy to finalize that map.
I haven't tinkered with any parameters myself. I am just running a stock +6psi hondata injen SRI map and my car doesn't knock. Salik bhai on the other hand got his car re flashed on unichip and his knocking seems to have disappeared as well. Previously he was facing knocking problems.
And as for the Mercedes. It actually throws a CEL and even shuts down a cylinder completely if it knocks (tik tik sound) 2-3 times in a short period. You have to actually remove the error code from the system. I've been to Shahnawaz at least 4 times with this issue and met numerous E class owners facing the same dilemma. Shahnawaz just removes the code, gives you two bottles of octane booster and suggests that you fill up total hi octane and the problem won't resurface.
