Welcome back @ahmadbila . Good to see you again after some time on Pakwheels. You're right, Pakwheels is not what it used to be back in the day and many oldies have disappeared as well.
I have lived in RAK briefly as well and that makes us old muhallay daar
Anyways, beautiful choice for a project. You seem to have taken care of everything. The only that remians is wax. The dry harsh weather of UAE takes it's toll on the paint. Luckily, your's hasn't fallen victim to oxidation which is a good sign.
As for rims, try the Sharjah used parts market. You will have to roam around but you will be able to land a good deal for M3 rims or any other nice set. Plenty of stuff there. You will also find a good pair of headlights if you are upto it.
One more thing you might have missed is the cabin filter. The dust in the UAE takes it's toll on those as well.
I would suggest you change the brake oil, power steering fluid, diff and gear oils as well or at least check them to see if they need replacement.
Oh yea! Congratulation on the license. I know it's as big a deal as your passport 
RAK has some very nice potential! Go towards the mountains at the Oman border and you will find some really nice deserted hilly roads
