Jailbreaking iPhone is quite easy, you should do it via Redsnow, on screen procedures and you are done with jailbreak in less than ten minutes. Till now there is no untethered jailbreak for 5.1, tethered is available means if you restart your phone you will be stuck on Apple logo, but there is a SemiTether package for 5.1, you can install that , with this package if you turn off your cell phone and turn on again you can use it but cydia and jailbroken paid apps will not work, and to make them work again you ll need to connect to Redsnow to boot in tethered state, but its easy.

Waiting for untethered isnt fruitful, because you never know what's next and living without jailbreak is not easy, you will enjoy your iOS5 jailbreak, because with iOS5 whole experience is changed, lots of lots of tweaks, homescreen customizations, notification bar customizations, dreamboard etc, so apart from apps it itself is a good experience.

Not really, it will slow down if u will install too many packages, tell me when you are done with jb, I ll tell you about widgets etc..
