Yes 4.1.2,that is for sure any data wont get deleted,though i have updated different android phones,in that case it didnt remove any data.the nexus i got was already on latest FW and i hope will get the next update tonight

Rooting doesnt create any problems like the ones you mentioned.A rooted galaxy s is the same as on stock rom, the only difference is the you now have special root privileges and can install some apps which require root like titanium backup etc.
BTW you can use titanium backup to backup your apps and data.

On the hand if you install roms they will be faster than the stock rom but MIGHT have some errors or bugs but mostly they are better than the stock rom.

I have been flashing roms on my Galaxy s for almost a year now and honestly when i revert back to stock rom i cant stand the sluggishness of the phone.

In past (1 year back), I used HTC dream, it was having stock android 1.6, I rooted it and installed 2.2 froyo, but in android market many softwares were not supporting (I was getting error something like that "your carrier not supported"

I am using windowsphone 7.5, and it is completely free from any type of bugs and error. and it is really smooth and fast.

I never ever face any single error till yet (using approx 5 months).
