I am using Vitz 2014 since last 10 Months, Drove 12,000 Km. Current Millage 49,000. I used 10W40 during this time period. Milage is 15.3km/Ltr without AC, 14.5km/Ltr with AC. I need to know if changing the Engine Oil from 10W40 to 5W30 for a better economy is the right step or should I stick with same 10W40?Note: I have already read the recommended engine oil for Vitz and economy etc. I just want to know the effects of changing oil grade @ 50,000 milage.

Your car model is just 05 years old, with mileage less than 50k Kms. I think, there is no harm in it.
Pick, Power, Fuel economy, etc. everything will improve, since 5w-30 (besides 0w-20) is the recommended oil grade for Vitz.

BTW should i change spark plugs as well at 50,000? Will they improve the economy?
I think original Japanese Spark plugs can last above 100k km. You can check their condition at the time of tuning and if found dead then install the new ones of the same quality. and yes spark plugs are part n parcel of fuel economy
If required, then replace them otherwise continue using them.
If going for replacement, then go for only OEM, stock ones. No need to go for performance plugs, etc.
