- Preheat grill to about 600F:

- Choose good cuts of meat (Porterhouse is one of my favorites) which should be at room temperature:

- The cuts should be about 1 inch in thickness:

- Sprinkle lightly with a mix of salt, black pepper, red pepper and garlic:

- Place the steaks on the grill and lightly season the other side:

- Cook one side at high heat for about 4 minutes:

- When the color begins to lighten flip over:

- Cook the other side at high heat for another 4 minutes or so:

- Flip over for second time:

- Reduce heat to about 300F:

- Rotate the steaks 90 degrees to get the hatching pattern if wanted:

- Let sit for 15 minutes before serving with all the trimmings:
