The viscosity of 0W-30, 5W-30, and 10W-30 at operating temperature are within the same range, i.e. a 30 grade oil. They are effectively the same "thickness" when they are hot. You will not see a significant difference in fuel economy, least of all in your climate.
You go below the manufacturer's specified oil viscosity at your own risk. Especially without any knowledge or measurement of operating oil pressures.
