Those are pretty good specs. Within those constraints, you should be able to get good results. The self timer will work for a remote release, but likely only up to 30 seconds, but that should be long enough for most situations.
Select a scene, and spot meter on the feature that you would like to be exposed perfectly. If you choose a light, the rest of the scene will be too dark, so experiment with this a bit. Then, shoot one shot with the aperture wide open at your chosen focal length.
Then look at the shutter speed for that aperture. This will now give you an idea for setting up the shot manually, and increasing or decreasing values from that starting point till you get thew result you had in mind.
