I would think it's perfectly fine to use, as long as the total contents have been in an airtight container over the last two years to mitigate oxidation.
The shelf life is greater than two years anyway, and while it will attract moisture, one good hot warm-up inside the engine will boil it all off. The oil while inside the oil pan attracts moisture too, and it's necessary to get an engine to operating temperature to boil it off.
