Would you trust used up brakes in your car. Never compromise on brakes with used parts. Always buy new. Its not wise to save a few bucks and risk your life.Ventilated ones are better because the have better cooling properties. Changing drums to disks is possible but it requires alteration and alteration on brakes should not be done.

If you have matching proportional valve with them, then you can go for swap. Otherwise it's better to stay with stock.

Rotors are items that you can visually inspect so if look like they have good thickness go for them. For used item it should not be warped. Otherwise no problem. Cuore brakes r already good. When you brake most of load shifts to front so front brakes do most of work. Due to brake booster, slight push of pedal locks brakes. So there isn't any need of disks at back

These are rotors only. Are they going to fit on oem callipers?
Proportional valve divides the pressure in front and rear. Bigger brakes need more pressure. If you disturb the ratio either front or rear will lock early.
You can upgrade to all wheel disc you just need matching valve so they can work properly.
