Brother i think you are expecting too much leg work on a free internet forum. I doubt that anyone will go to the length in replying to such a long list.
In short: All the expenses are relative and depend on what level of service/accommodations are you looking for. Search on booking.com for a variety of hotels. Food again depends on where you wanna eat from.
A good app for taxis is BiTaksi, in istanbul metro card can be purchased from the ticket machines (only i think). Metro is probably the cheapest way to move around in Istanbul.
All in all dont expect Turkey to be much cheaper than other European destinations. Its not really a budget travel destination due to large number of tourists from Europe. Its a beautiful and historic place though.
