EV stands for Electric Vehicle. It automatically switches on when the battery of your hybrid system is charged and is able to provide the power needed for the car, when driving with light foot it turns on or with ignition it's initially on. By pressing the EV mode you just prolong the car to stay at electric motors, it keeps it electric until you reach 60kmph or the battery gets discharged, doesn't shift to petrol engine.
