Change Engine Oil, Transmission Oil, Differential Oils, Brake Fluid and Clutch Fluid, Power Steering Fluid.
Perform a compression test as well. Which engine is it running?
Have you bought it in Japan or from Japan and importing it here ?

My mechanic is worried that if trans oil is changed it may cause shifting problems by disrupting viscosity in oil, he say over time the oil mixes with particles and creates a proper viscosity that should not be changed.. Ever hear of this?
Just leave the oil change for now, first change your mechanic...
It is all trash what he has said.... i will suggest not to visit him again.... he dont know anything about cars...

Never heard about it yet!It's always better to change lubes and filter when you buy old car. Because we don't know how it is used.After that follow the service manual.
This is trueI have heard that it is not recommended to change trans oil in a car which has not has its transmission oil changed for a very long time for this exact reason
Yeah, it's a ticking time bomb, they suggest that you wait for it to explode on its own, always better to change the oil, if changing the oil will make it have trouble, that means it was in its way out anyway. So better to deal with it at the workshop rather than a highway
If it's an auto transmission then easiest way to see if the fluid needs replacement or not is to check its color. Pink is absolutely fine and dark brown indicates the need to change.
What your mechanic and my mechanic says, becomes completely immaterial, then.

you may need to open the transmission sump and change / wash clean (with benzene or thinners) the transmission oil filter as well

Generally, if the fluid hasn't been changed in a long time, it is recommended to never do a flush(using a machine to suck all the fluid out) as that can cause transmission failure. A simple drain and fill however, is the recommended option.
