Sounds like your car has a leak somewhere thats why its not able to control its temperature, If your mechanic simply pressed some pipes on a cold engine (fan running direct and no thermostat valve means very cold engine) - there will be no pressure built up in the system (please change your mechanic immediately - he does not know the physics of how this simple cooling system works)
In normal condition the engine should operate at 82C minimum (that is the thermostat temperature - buy a suzuki item, its the same and it fits too). Your temperature gauge should show about 40 or 45% sweep - this is called normal operating temperature and is very good for the engine - it will also keep your fuel cost down, keep the engine oil very clean and the engine will have long life.
coolant/water cannot move from the expansion bottle by revving the engine - it works only when hot expanded coolant is ejected from the radiator cap and is sucked back when the system cools off.
Sometimes the water pump impeller corrodes off and also the intake pipe blocks (this metal pipe runs under the exhaust manifold to the water pump) - if it blocks with rust water/coolant will not circulate to or from the radiator meaning it will act like a permanently blocked thermostat valve - change it if its even slightly rusty internally.
Before you correct the wiring to the fan make sure the thermoswitch works - the design is very poor on this car for its connector. My remedy to this poor design was to solder a wire to the exposed terminal and then make a spade connection for disconnecting. It never fails after that.
