Update:
Upon reaching home and doing further investigating it seems to be on the one side only and there's tell tale signs of it being a bad wheel bearing.
Upon removal of the tire on that corner, there was some leaked silver silicone grease on the hub, this is the hub for which there was already a known bad wheel bearing (I noticed a whine a month back) and it got beaten up pretty well when we were installing the springs in the rear. I also heard a pop about 2 seconds before the tire locked up.
Goes to show these things should be dealt with ASAP and not left for later or this can happen. I didn't know a wheel bearing could seize like this and jam a wheel almost completely.
