Drive the car on a long route e.g., motorway, during night hours or early morning (preferred) and observe the needle movement. Coolant gauge temperature needle (especially in old Hondas) attains mid position (as in picture) when coolant temperature try to rise above 60~65° C and stays almost in the same position till temperature further rises above 100~105° C. The gauge enters kind of a buffer zone, and one can not notice variations in this temperature band with this gauge.
Best method is to directly read coolant temperature values from the ECU with the help of a scanner or install a separate aftermarket thermistor on the coolant line and attach a digital readout display, alternatively.
