First of all, great work!
For the rotors, I assume you have checked out clearances from not just the wheels, but all the suspension components as well. The calipers must be rebuilt before installation since their service history is unknown, and one should never take a chance with the brakes.
The choice of 6061 is good, but here, with the heat recycling and the stress of braking, the parts may benefit from being made out of steel. Please keep in mind that 6061 loses about half of its strength at only 600 degrees F, and aluminum generally does not like heat recycling stress over the long term.
