Say Bismillah and Go for infini 3kW ,

Input voltage DC required is 360V to 500 V
maximum input current 18 A

use 10 x 310 W panels , input voltage max will be 44.8 V * 10 = 448V
Current max will be 9A
so 10 panels connected in series
You can use the 11th panel also , but I recommend you be safe and avoid frying up your inverter on a cold sunny day (maximum output by panels)
You might want to consider 250W panels, or even 200W to make a good combination, if the shop keeper recommend a setup, please share
Use circuit breakers , fuses, properly size wires ,
and get the dealer to go into configuration and stop grid feed in
the picture below shows max feed in is 0W

you can also do other configuration as per your wish
PV means photovoltaic or solar energy in easy terms
1) Not allow grid/WAPDA to charge your battery, use only solar
2) Priority 1 is always PV, when PV is not sufficient , use grid (Priority 2) then battery (Priority 3).
I have seen people using PV->Battery->Grid , this will drain your battery , then use grid to run load and charge batteries , if feed back is also enabled, bill get higher bills
3) When no PV , use grid then battery
again i have seen people use Battery then grid
if you have problem with load shedding at night, you can activate charging batteries at night using above option when you have no PV. again it depends on your requirement, load shedding time

People tend to ignore all this and say solar is failed technology, i helped people install solar systems and they used them to operate ACs in Lahore/Karachi , they were all very happy , Alhumdulillah .
