If it's in a bad shape (the Cavallino Rampante :p), I think it'll be horribly expensive to restore it. That said, if someone has got a pic of it, please share! I'd love to see it no matter what shape it' in.
Good luck on the Austin Healey resto. I know you don't need the luck, but heck, a bit of it wouldn't hurt would it? What colour are you going for (apologies if you've already discussed it)? Are the mechanicals going to be refurbished, or they'll be used as is?

Take my comments with a grain of salt, as I'm biased towards Japanese cars, anyway, here it goes:
If you look around Japanese classic car websites, you'll see that the 1st Gen Celica has started to enjoy classic car status. Of course, being a Japanese car, it might lack a certain cachet, but still, I think it's a rather rare motor.
Another reason for the rarity is possibly because it's a bit difficult to find one in good health. The steel of '70s Jap mobiles isn't the best you'll find anyway - so be prepared for the tin-worm.
If you can find the original engine, you should restore that. If you're not too interested in originality, then anything might be made to fit. There's even one running around in Peshawar I think with a 1UZ-FE V8. My personal choice of engine - if your budget allows of course - would be a 4AGZE. Just the right amount of power without overpowering the stock suspension and brakes too much. Coupled with 15" allows should look very nice.
